For this week’s Foodie Friday, our Japanese student Riko made a traditional Japanese dessert; Sweet Potato Cake

These cake-like sweet treats are perfect for enjoying as a morning or afternoon snack, or as a dessert, and are much more nutritious than most other cakes.
Ingredients:
- 1 sweet potato
- 10g butter or margarine
- 20g sugar
- 20g milk(or cream)
- egg yolk (for glazing)
Method:
- Peel and cut the sweet potato and soak in water for 3 minutes
- Microwave the sweet potato in a microwaveable dish until soft.
- Mash the potato and add the butter, sugar and salt while it is still hot
- Add some milk (or cream) in order to give the mash a firm but pliable texture
- Mould into crescent shape. This should make about 2-3 shapes depending on the size of the potato used.
- Put the sweet potato cakes onto some parchment paper and glaze with the slightly beaten egg yolk
- Bake in the oven for 10 minutes at 180c, depending on the type of oven, adjust cooking time accordingly
